they are all dark grey except for one, that one is very light like an albino
catfish and he only has one eye.... he swims around and eats just fine

has anyone had an albino guppy with one eye before? or a fish born with one
eye (birth defect?) ?

Depending on the genetic background of both parents, it may indeed be an
albino, or perhaps a gold bodied fry. Eye colour will decide and that is
often not readily distinguishable in day old fry.
If this single fry indeed has but one eye, it could be a birth defect, or it
may be physical damage while in the female's body, during the birth process,
or attacked when free swimming.
