All the books tell you - whatever state your tanks in - however often you
water change - however many fish you keep - watch your fish.
During very high outside temperatures recently (32c) my wife noticed the
fish seemed to be constantly on the surface, which seemed odd - I
immediately tested the water and found the Nitrites had spiked !!
Quite sudden and potentially lethal - I had heard of this happening but had
not experienced this b4.

Be Warned - arm yourself with a test kit.
