Ok, had an ammonia problem, soon went away after killing all but one fish
(the most beautiful Angel survived - yay go me) but now have a nitrite
problem ~ ammonia is converted to it. The water tests reveal that the
nitrite level is between about 0.25 and 0.30ppm - a purple solution when it
should be light blue (0ppm). Now this was tested after doing a 1/3 water
change, which i do every week (god forbid any more water restrictions in
Melbourne!!!). Water changes and cleaning the filter out every week should
fix that right? Ive never had a nitrate problem before, only ever ph rising
and a slightly higher than normal ammonia before (but recently that bad high
ammonia then followed by this nitrite problem).

Also, now that my tank is *almost* empty... what fish should i populate it
with? Im a little bored of Angel fish, since they are not very active. But i
dont want to rid myself of the one i have left (its been through a lot and
its my prized fish). Id like to get a whole bunch on active fish such as
neons, or something else colourful. Ive tried guppies before but they always
died after a few days and ive never intended to make such a bit purchase
(such a big # of fish).
Any suggestions?

The nitrite problem will go away by itself once the bacteria in the filter
kick in. It will convert to the harmless nitrate, which is beneficial for
live plants. Water changes are good to dilute the nitrite problem, though at
the level of nitrite you have it should go away rather quickly - over 1ppm
is deadly, but yours is ok, may stress your angel though.

As for fish to go with your angel, neons will be fine, so long as they are
big enough (or your angel small enough) not to be eaten. You want to stay
away from any barbs or fish that are territorial or nip fins. Dwarf gouramis
are a good combination with angels in my experience, stay away from gold
gouramis though.
